Hoshizaki machines outlast most of what they sit next to. What they cannot outlast is Phoenix water. Local techs descale, repair and code-read them across the Valley.
The stainless evaporator is why hotels and resorts across the Valley standardise on Hoshizaki, and it genuinely does resist fouling better than the alternatives. It does not make the machine immune. Phoenix water still leaves minerals behind on every harvest, and on a crescent cuber the first thing you notice is not less ice but oddly shaped ice, because the cubes are releasing unevenly. By the time production has visibly dropped, the plate has been carrying scale for months. We would rather be descaling yours on a schedule than replacing a gearcase because nobody was.
On Valley water a Hoshizaki wants attention roughly twice as often as the manual assumes. A proper service is a full descale and sanitise of the water path, not a wipe of the bin, and local techs check the condenser and the float at the same time because on these machines the three problems arrive together. If yours has already stopped, our after-hours line is the faster route.
It is usually the first warning. Misshapen or fused crescents mean the plate is not releasing cleanly, which on this platform points at scale well before output drops enough to notice. Catching it there is a clean and descale. Ignoring it is how a float switch or a gearcase ends up in the quote.
It narrows it, and no more than that. A Hoshizaki code reports the condition the board can see, which is often downstream of the actual fault, so a code pointing at the water system can turn out to be a condenser that cannot reject heat. Local techs read the code, then confirm it against the machine rather than replacing whatever the code names.
