Is a torn gasket really worth calling someone out for?

Yes, and it is the cheapest call you will make all year. A door that does not seal means the unit runs continuously, pulls humid kitchen air across the evaporator, and frosts up. You pay for it twice, in the power bill and eventually in a compressor. A gasket is a small job; the compressor it prevents is not.

It is fine in the morning and warm by dinner service. What is that?

That is the unit losing to the day rather than being broken. As the kitchen heats up and the door count rises, a system with a marginal condenser or a poor seal cannot keep up, then recovers overnight when everything cools.
