The awkward thing about restaurant refrigeration is that it accumulates. A True reach-in bought with the fit-out, a used prep table from a closure, whatever ice machine the last owner left, and a walk-in older than all of it. Nobody planned that fleet and no single manufacturer will service it. We work on all of it in one visit, which matters because the failures tend to be related: the same hot, dusty kitchen is aging every condenser in the room at the same rate, and fixing one while ignoring the others just changes which unit fails first.
A tech arriving at 6pm on a Friday to pull a condenser apart is not help. Where the fault allows it we schedule between services or before open, and where it does not we tell you honestly that the unit needs to come down now. Temperatures get verified before local techs leave, not promised. A maintenance plan is what keeps this off a Friday in the first place, and the 24-hour line is there for when it is not.
Most of the time. Gaskets, fan motors, controls and coil cleaning can all be done around a service, and we would rather come at 9am than during your dinner rush. What we will not do is pretend a walk-in that needs the system opened up can wait until after the weekend when there is product in it.
The standard that matters is cold holding at 41°F or below, and the practical trap is a box that reads correctly on a wall thermometer while sitting several degrees warmer where the product actually is. Readings are verified against a calibrated reference at product level before the techs leave, and left with you. That record is worth having if an inspection follows a failure.
